Bulla is naturally gluten-free and incredibly easy to digest, and has long been a go-to for gentle nourishment. It is traditionally served to children, the elderly, and those recovering from illness, but it’s just as beloved as a cozy breakfast or calming meal. Its light, neutral flavor makes it the perfect base for warm spices, clarified butter, or olive oil.
It is made from the root of the enset plant, a resilient crop known as the "tree of life." Grown in the highlands of southern Ethiopia, enset has nourished communities for centuries thanks to its drought resistance and deep nutritional value.
To prepare, simply whisk the flour with milk or a non-dairy alternative, cook gently until smooth and slightly thickened, then top with korerima, mitmita, and a swirl of nitter kibbeh.
