Ivory vs. Brown: What’s the Difference?

  • Ivory Teff Injera – Lighter in color and milder in taste. Ideal for those new to injera or who prefer a subtler flavor.
  • Brown Teff Injera – Deeper in color with a slightly earthier taste. A favorite for those seeking traditional, bold flavor.

Shelf Life & Storage

  • Keep it in your pantry or a cool, dry place until opened and enjoy by the date on the package.
  • Once opened, store in an airtight container and refrigerate. Consume within 3 days of opening. Can be frozen in a freezer-safe bag for longer storage. 
  • Pro Tip: To restore softness and aroma, warm in a microwave wrapped in a paper towel or in parchment paper if using an oven. 

How to Serve Injera

  • Use to scoop up traditional dishes like doro wat, misir wat, or shiro.
  • Line your serving plate with it and build a full Ethiopian meal on top - the soaked injera is the best part.

Our injera is made with teff, a naturally gluten-free grain. While it is not certified gluten-free, we take care during milling and storage to minimize the risk of cross-contact with gluten-containing grains. Though the likelihood of gluten exposure is extremely low, individuals with celiac disease or severe gluten sensitivities are advised to use discretion. 

  • Do I need to refrigerate it?

Not until opened. It’s shelf stable until the best by date in the package. Be sure to store it in a cool, dry place. 

  • How is it shipped?

Each injera is individually wrapped and packed in a box of 4.
We ship nationwide within 1 business day via USPS or UPS, with several shipping speeds to choose from at checkout.

  • What size is the injera?

Traditional and generous: about 19 inches wide and weighs 9 oz., the exact injera enjoyed in Ethiopian homes.

Excellent!! my injera arrived today and it is exceptionally perfect through in the microwave for 1:30 minutes wrapped on paper towel it is 100 percent Tif and gluten free so I had no problem with wheat allergy which is the biggest problem with my local Ethiopian restaurants I do wish though I could overnight it for even faster delivery

Never sent my package!

I ordered back on Jan 26th and have not received my package. I reached out to UPS and they said it was never given to them. Ive sent multiple messages on the contact form and no communication to me. I’m really upset because I am gluten free and cannot get injera near me. Waste of money.
