Shiro wot is a delicious, nutritious, simple, affordable dish that is suited to all diets. The stew is gluten-free, nut-free, soy-free and vegan.

Ingredients
Yield: 2 servings
- ½ cup of neutral oil such as avocado
- 1 medium red onion, finely diced
- 4 garlic cloves, minced
- 2 medium sized Roma or any other ripe tomatoes, finely diced or grated on the big side of a box grater
- 3 – 3½ cups hot water (depending on how thick you want your shiro wot to be)
- 3 oz (85 grams) mitten shiro powder
- Salt, to taste
- Basil or holy basil sprigs (optional)
Step 1
Begin by heating oil in a medium saucepan over medium heat.
Step 2
Add onions and sauté until they are lightly browned. Add garlic and sauté for 2-3 minutes.
Step 3
Add tomatoes and continue cooking until the oil visibly separates from the tomato mixture.
Step 4
Pour in the hot water and let it come to a boil.
Step 5
Add the mitten shiro powder and stir using a whisk to break up any lumps. Let the mixture reach a rolling boil.
Step 6
Reduce the heat, cover with a lid, and simmer until the oil separates. Exercise caution when adding salt, considering the existing salt content in the mitten shiro powder.
Step 7
Stir in the basil or holy basil if using. Turn off heat and serve on injera.
